Evoking a romantic and warm inviting  ambiance that’s both at once trendy and old school, prepare to be awed at the commanding new Pistola’s black wooded split-level steakhouse, with a towering bar (and flat screen) gracing the entry. Above the  slate  gray walls, a flight of stairs leads to a mezzanine and covered patio for your additional dining pleasure.

            Add to that the right  blend of nostalgic Italian comfort food mixed with modern creations and you have the ideal dining experience that balances refreshed culinary cues from the great techniques of the present and innovations of the future.

            Paying homage to the 1950′s  iconic  Italian establishment of  New York City, Chef Vic Casanova, the artist at the culinary helm, brought the evolution of Pistola the classic Italian restaurant to life in Los Angeles , alongside partner Seth Glassman.  Seth  successfully opened Los Angeles hotspots BOA Steakhouse, RivaBella and Chi Lin, in addition to elevating the dining reputation of Los Angeles’ neighborhood of West Hollywood.


            Chef Casanova began his culinary career at an early age and received a degree in Culinary Arts and Restaurant Management at Peter Kump’s Institute of Culinary Education in New York. He cultivated his skill set under industry luminaries including Daniel Boulud, Scott Conant, and Cesare Casell. He opened Culina restaurant at the Four Seasons Hotel Beverly Hills in  2010 and Gusto in 2011 where he received local and national accolades.

             Chef Casanova fills the menu with the highest quality, freshly imported ingredients from all over Italy, combined with local predominately organic ingredients, upholding traditional Italian standards of simplicity and excellence in every meal. He brings together regional and international flavors showcasing a wide range of flavors to satisfy any palate.

            Appetizers include an insalata Mista; Pistola “chopped” prepared with iceberg, treviso, salami, provolone, shaved red onions, sweet 100 tomatoes, pepperoni peppers and chianti  vinigrette; pizza del Giorno a hand crafted pizza of the day from their wood burning oven; the highly popular meatballs with Sunday gravy, Dungeness crab cakes alla Mina; charred Mediterranean octopus; and Arancini “Cacio Pepe”

            Classic dishes that are lovingly crafted, are spun with unique twists and elevated to new levels.To-die-for flawlessly prepared steaks are dry-aged Delmonico;  a hefty Porterhouse; NY strip boneless; ribeye boneless; and beef tenderloin . You can’t go wrong with the  sumptuous veal chop alla parmigiani; and quail al Mattone; and a variety of butters and sauces that are available including Tuscan herb; Calabrian chili; Bernaise; salsa verde; bordelaise; and creamy horseradish.  Seafood  classic dishes are grilled branzino; wild Spanish cod; jumbo shrimp scampi; and Georges Bank sea scallops.


            A savory selection  from the pasta menu includes – squid ink agnolotti; tonnarelli; rigatoni alla vodka; butternut squash gnocchi; tagliatelle; garganelli and linguine with Manila clams, leeks and Mollica.

            Sweet ending highlights are sorbetti , dark chocolate, mango & raspbery;  affogato, vanilla gelato drenched in espresso; coconut pana cotta, blood orange sorbetti & basil; Sicilian cannoli with sweet ricotta, candied orange, pistachio & chocolate chips; and banana cream gelato pie in a chocolate cookie crust, with caramelized banana, chocolate fonduta & vanilla bean whipped cream.                                                   


Cocktails & Wine

            Glassman and Casanova strongly believe in the cultural Italian practice that no meal is complete without the perfect glass of wine. Pistola’s wine menu reflects the quality and diversity of Italian vineyards, celebrating one of the most extensive and intelligent collections Los Angeles has to offer. The spirit list reflects Italian liquors that are traditionally served as an aperitivo or an after-dinner digestive.

            Perfect  martinis and choice cocktails include: Negroni; Old Fashioned; Vodka Young Turks and Donna Moderna.
